Exploring Effects of Exogenous Selenium on the Growth and Nutritional Quality of Cabbage (Brassica oleracea var. capitata L.)

Selenium (Se) is an important trace element in human and animal health. Approximately 0.5–1 billion people worldwide are facing Se deficiency which can result various endemic diseases. Cabbage one of the most popular vegetables accumulate through biofortification. Therefore, producing Se-enriched cabbage may be effective method to alleviate deficiency. In this study, effects different concentrations selenite application on growth nutritional quality were investigated results showed that was promoted at low (0.1–0.4 mmol/L) but inhibited high (0.8–1.6 mmol/L). Concentrations 0.1–0.2 mmol/L induced accumulation primary metabolites (soluble proteins, soluble sugars, free amino acids), representative secondary (ascorbic acid, glucosinolates, flavonoids, anthocyanins, phenolic antioxidant enzyme (glutathione peroxidase, catalase, superoxide dismutase) activity improve cabbages. addition, a higher concentration proved beneficial total organic The main species selenomethionine (SeMet), accounting for 12.10% Se, followed by selenocysteine (SeCys2), 2.96% Se.
